Vinification
The moscato yellow grapes are picked at a precise ripeness, the white vinification process follows.
The must obtained is bottled, after a second fermentation of a few months following all the various steps of the classic method: presa di spuma (secondary fermentation) for some months, remuage sulle pupitres (riddling) so the sediment eventually settles in the neck of the bottle, disgorgement (removal of the sediment), final capping with cork.
Refinement
Approximately 12 months from harvest.
TASTING NOTES
Appearance: Soft spume with a fine, persistent perlage. Colour: Bright straw yellow. Scent: Its typical aromas, intense and inviting, pleasant notes of sage, musky notes typical of the grape variety are well received. Flavour: Enveloping, its acidity is perfectly integrated in the sweetness of its flavours of yellow peaches and apricots.
Distinguished for its extreme finesse and perfect harmony between acidity and sugars.
Combination
It accompanies yellow fruit tarts, elaborate cakes with creams and mousses.
